Thai Green Salad with Peanut Sauce
INGREDIENTS
1 small head romaine or leaf lettuce
1 bunch scallions
1/2 cucumbers
1/2 cup of shredded purple cabbage
1/2 cup of shredded carrots
1 garlic clove,crushed
2 tbsp. chopped fresh cilantro
1 tbsp. chopped mint
Peanut Sauce:
8 tbsp. crunchy peanut butter
1/2 small onion, grated
1/2tbsp. dark soy sauce
2 tsp. soft light brown sugar
1/2 tsp. chili power
1 1/4 coconut milk
1/2 cup hot water
Procedures:
1. Tear or roughtly shred lettuce and place it on a large salad bowl
2. Slice the scallion and add to salad bowl
3. Shave cucumber in with a peeler and add thin slices to salad bowl
4. Place all ingredients for the dressing in a screw-top jar.
5.
Mix once thoroughly and shake well.
6. Place your salad on a salad bowl and pour sauce over top.
